For those lap band or gastric sleeve patients who are in the pureed food stage after their bariatric surgery, pudding can be a good choice of food to incorporate into their diet as it provides more vitamins, minerals, and protein than a gelatin product. This recipe could be incorporated easily into the pureed food stage as it is puree consistency, but has a benefit of adding flavor as well as vitamins and minerals from the canned pumpkin. One cup of canned pumpkin provides only 83 calories, 20 g carbohydrates, 1 g fat, 3 grams of fiber. Canned pumpkin also provides a host of vitamins and minerals including vitamins A, K, C, E, B-6, riboflavin, potassium, copper, manganese, thiamin, folate, pantothenic acid, niacin, iron, magnesium, and phosphorus. Since canned pumpkin is available all year, this recipe isn’t strictly a fall time treat. Lap band and gastric sleeve patients can make this recipe no matter what time of year they choose to have their bariatric weight loss surgery.

Pumpkin Pudding

  • 1 box vanilla instant pudding (sugar free)
  • 2 cups skim milk
  • 1 15 oz can of 100% pumpkin
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger

Directions:

Prepare pudding as directed. Once pudding is set, fold in canned pumpkin and spices. Refrigerate until serving.
